Chives

Chives have a long loved relationship with potatoes being paired as the ultimate topper to a perfectly baked spud. However, chives are a fantastic herb for adding a mild onion or light garlic type flavor to sauces, soups, gravies, and stock bases. Chives are a member of the Allium family and grow in various heights and thickness. Well formed long upright spike-like hollow tubular leaves grow in well formed masses that are harvested and typically used fresh, diced or pureed. This flavor packed herb can be grown year round in a sunny window sill indoors or field grown outside after your last frost in spring for an abundant summer time crop. Depending on the variety, either white, pink or purple star shaped flowers will bloom on mature plants and make a showy flavor filled garnish to salads, soups and meat based dishes.
